Organic Apple Juice (like Santa Cruz)
Orange slices (optional)
In a small stock pot, heat up 2 cups of the Apple Juice to a gentle simmer.
Add 3 – 4 cinnamon sticks to the apple juice. Meanwhile, add 1 cup of boiling water to 2 tbsps Chai Tea leaves to brew an extra strong pot of tea. Steep for 2.5 – 3 minutes, and add to the warm apple juice.
Simmer gently for 5 – 10 minutes. The longer it simmers, the more intense the flavour. If you make a big pot, and have it simmering for upwards of 30 min, add a splash of apple juice every now and then.
Prepare 3 glasses or mugs (or mini-mason jars) by adding 3/4 oz rum to each one.
If you don’t have spiced rum, you can infuse a few tbsps of the dry leaves in a bottle of white rum or whiskey for an hour. The rum will take on some of the flavour of the chai. If you do this, be sure to strain out the leaves before it gets bitter.
Once the rum is in the mugs, pour in the bubbling cider. Bonus points if you can land one of the cinnamon sticks in each mug.
This recipe is super easy, and can easily be customized. Depending on personal taste, or if you use a different apple juice, you may want to add a touch of brown sugar in the pot. Or perhaps you’re a whipped-cream-on-top kind of person. Adding a slice of orange to the bottom of the mug, or onto the rim will add an extra sweet-citrusy note to it.
